  • 2 cups digestive cookies or graham crackers
  • ½ cup butter (melted)
  • ¼ teaspoon salt
  • 2 tablespoons powdered sugar
  • 3 cups fresh apple cider
  • mulling spices
  • 3 cream cheese bricks (227g each, softened)
  • 1 cup brown sugar
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 cup sour cream
  • 1/3 cup reduced apple cider
  • 1 teaspoon cinnamon
  • 3 large eggs
  • 2 tablespoons all-purpose flour

Instructions

  1. Boil 3 cups of fresh apple cider with mulling spices in a large pot for about 1 hour until thickened to about 1/3 cup. Let cool.
  2. Preheat the oven to 350°F (175°C).
  3. In a food processor, crush 2 cups of digestive cookies and mix with ½ cup melted butter, ¼ teaspoon salt, and 2 tablespoons powdered sugar until crumbly.
  4. Press the crust mixture into an 8” springform pan and bake for 10 minutes. Cool and chill.
  5. Reduce oven temperature to 325°F (160°C). In a stand mixer, beat together cream cheese and brown sugar until smooth.
  6. Add sour cream, vanilla extract, cinnamon, salt, and reduced cider; mix until creamy.
  7. Incorporate eggs one at a time along with 2 tablespoons flour; mix just until combined.
  8. Pour filling into the cooled crust and bake in a water bath for at least 90 minutes or until edges are set but center is slightly wobbly.
  9. Turn off the oven and let cheesecake cool inside for 30 minutes before refrigerating overnight.
