  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples

Instructions

  1. Preheat your oven to 400°F and prepare a muffin tin with paper liners.
  2. For the crumble: In a bowl, whisk together flour, light brown sugar, granulated sugar, and cinnamon. Stir in melted butter until small clumps form. Set aside.
  3. For the muffins: In another bowl, combine flour, cinnamon, nutmeg, baking powder, and salt. Set aside.
  4. In a large bowl, beat together light brown sugar, granulated sugar, and room temperature butter until fluffy. Add eggs, sour cream, and vanilla; mix well.
  5. Gradually add half the dry mix to the wet ingredients followed by milk; mix again. Fold in remaining dry mixture and diced apples gently.
  6. Divide batter among muffin cups and top with crumble mixture.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
