  • 810 slices chicken bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 12 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)

Instructions

  1. In a large pot over medium heat, cook the chicken bacon until crispy. Remove from heat, chop into small pieces, and set aside.
  2. In the same pot, add butter or olive oil. Sauté diced onions and sliced carrots until they are tender, about 5 to 7 minutes.
  3. Pour in the chicken broth and bring it to a gentle simmer.
  4. Stir in heavy cream along with salt, black pepper, garlic powder (or minced garlic), thyme, and red chili flakes (if using). Gradually add shredded cheddar cheese while stirring continuously until melted.
  5. Add gnocchi to the pot and cook for about 2 minutes or until they float to the top.
  6. Stir in the chopped chicken bacon. Taste and adjust seasoning if necessary before serving hot.
