  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter (softened)
  • 2 egg yolks (room temperature)

Instructions

  1. Prepare the cheesecake filling: In a mixing bowl, blend cold cream cheese with 3 tbsp sugar and vanilla extract using an electric mixer until smooth. Refrigerate while preparing the cookie dough.
  2. Make the cookie dough: Whisk together flour, black cocoa powder, baking powder, and salt in one bowl. In another bowl, cream softened butter with light brown sugar and remaining granulated sugar until fluffy. Add egg yolks and vanilla, then gradually mix in dry ingredients until combined.
  3. Assemble the cookies: Preheat oven to 350°F (175°C). Flatten small portions of dough in hand, place a teaspoon of chilled cheesecake filling in the center, fold dough around it, roll into balls, then coat with black cocoa sugar before placing on a lined baking sheet.
