  • 1 cup European-style unsalted butter (browned)
  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk
  • 1/2 cup canned pumpkin (blotted)
  • Granulated sugar (for coating)

Instructions

  1. Make the brown butter by melting it in a saucepan until golden brown. Let it cool.
  2. Blot excess moisture from canned pumpkin using paper towels.
  3. Whisk flour, spices, baking soda, and salt in one bowl; set aside.
  4. In another bowl, mix cooled brown butter with brown sugar and maple syrup until combined. Add egg yolk, pumpkin puree, vanilla, and optional maple extract.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Chill the dough for at least 8 hours or overnight.
  7. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  8. Roll chilled dough into balls and coat in granulated sugar mixed with spices.
  9. Bake for 12-14 minutes until edges are set but centers are soft.
  10. Cool on baking sheets before transferring to racks.
