Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion
  • 2 cloves garlic
  • 10 oz package frozen spinach
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 lb penne pasta

Instructions

  1. Cook the penne pasta according to package directions until al dente. Drain and reserve about ½ cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken pieces with salt and pepper; cook until browned and cooked through. Remove from skillet.
  3. Sauté chopped onion in the same skillet until softened, then add minced garlic and cook until fragrant.
  4. Stir in thawed spinach and heat through.
  5. Pour in chicken broth and heavy cream; bring to a simmer. Stir in Parmesan cheese.
  6. Combine cooked penne and chicken back into the skillet; mix well. Adjust the sauce thickness with reserved pasta water as needed.
  7. Serve hot, garnished with extra Parmesan if desired.
