  • 1 pound flank steak
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a medium bowl, combine lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper to create the marinade.
  2. Place flank steak in a resealable bag or shallow dish, pour marinade over it, seal or cover, and refrigerate for at least 30 minutes.
  3. Cook rice per package instructions.
  4. Heat black beans in a small saucepan until warm.
  5. Preheat grill or grill pan over medium-high heat.
  6. Grill the marinated steak for about 4–5 minutes on each side until medium-rare (130°F/54°C).
  7. Let the steak rest before slicing against the grain into thin strips.
  8. Assemble bowls with rice base topped with black beans, corn, sliced steak, avocado, and additional garnishes as desired.
