  • 12 oz turkey sausage or chicken sausage, sliced
  • 1 medium onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 3 (15 oz) cans of white beans (cannellini or great northern), drained and rinsed
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: ½ cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey or chicken sausage and cook until browned.
  2. Stir in onion, carrots, celery, and garlic; cook for about 5 minutes until vegetables soften.
  3. Pour in chicken broth and add white beans along with smoked paprika, thyme, salt, and pepper. Bring to a boil then reduce heat to low.
  4. Cover and let simmer for about 30 minutes, stirring occasionally.
  5. For added creaminess, stir in heavy cream before serving. Optionally blend part of the soup for a smoother texture while keeping some beans whole.
  6. Remove bay leaf before serving and garnish with fresh parsley.
