  • 2 lbs fresh tomatoes (Roma or vine-ripened), halved
  • 1 whole head of garlic
  • 1 small onion, chopped
  • ¼ cup fresh basil leaves
  • 2 tbsp olive oil
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream (or coconut milk for dairy-free)
  • Salt and black pepper to taste
  • Optional: ½ tsp red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange halved tomatoes on the baking sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper. Cut the top off the garlic head, drizzle with remaining olive oil, wrap in foil, and place alongside tomatoes.
  3. Roast for 30-35 minutes until tomatoes are caramelized and garlic is soft. Let cool slightly.
  4. In a large pot over medium heat, sauté chopped onions in remaining olive oil until soft (about 5 minutes).
  5. Squeeze roasted garlic cloves into the pot, add roasted tomatoes and juices, broth, and basil.
  6. Blend with an immersion blender until smooth; return to low heat.
  7. Stir in heavy cream (or coconut milk) and simmer for another 5-10 minutes. Adjust seasoning if needed.
  8. Serve warm, garnished with fresh basil or a drizzle of cream.
