  • 2 Tbsp avocado oil
  • 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1 Tbsp avocado oil
  • 1 cup yellow onion, chopped
  • 5 large cloves garlic, minced
  • 1 (16-oz) jar roasted red peppers, drained
  • 1 (15-oz) can full-fat coconut milk
  • 1 tsp sea salt
  • 1 cup cherry tomatoes
  • 5 ounces baby spinach

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season salmon fillets with salt, garlic powder, and paprika. Heat avocado oil in a skillet over medium-high heat and sear the salmon skin-side down for 3–4 minutes per side until crispy.
  3. For the sauce, sauté onions in avocado oil until translucent. Add garlic and cook briefly. Blend in drained roasted red peppers and coconut milk until smooth.
  4. Pour sauce over the salmon in a baking dish. Top with optional cherry tomatoes and spinach if desired. Bake for 15 minutes or until salmon flakes easily.
