  • 6 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup pearled barley
  • Fresh thyme and parsley

  2. In the same pot, sauté onion, celery, and carrots until softened; add garlic and cook for an additional minute.
  3. Deglaze pot with apple vinegar, reducing by half while scraping up any browned bits.
  4. Add beef broth, Worcestershire sauce, thyme, and seared beef; bring to a simmer and cook for about 45 minutes.
  5. Stir in pearled barley; simmer another 45–60 minutes until barley is tender.
  6. Adjust consistency with additional broth if needed; season with salt and pepper before serving.
