  • 2 tablespoons butter (or olive oil for dairy-free)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, pepper, and any preferred spices. Grill for about 6–7 minutes per side until fully cooked (internal temperature should reach 165°F).
  2. While the chicken is grilling, toss broccoli florets in olive oil, lemon juice, and salt. Spread them on a baking sheet and roast in a preheated oven at 400°F for 15–20 minutes until crisp-tender.
  3. Cook your chosen grains according to package instructions.
