  • 2 tablespoons lime juice
  • Lime zest from 1 lime
  • 1 teaspoon chili powder
  • 1 tablespoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/41/2 teaspoon chipotle chili powder (optional for more heat)
  • 1/4 teaspoon pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear, sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced, seeds separated
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice for salsa
  • 1/4 teaspoon ground cumin for salsa
  • 1/4 teaspoon salt for salsa
  • 1/8 teaspoon pepper for salsa

Instructions

  1. In a large mixing bowl, whisk together olive oil, lime juice, zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if using), and pepper.
  2. Add pounded chicken breasts to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to overnight.
  3. Heat a grill pan over medium-high heat and cook the marinated chicken for about 5-7 minutes on each side until fully cooked (juices run clear).
  4. In another bowl, mix chopped avocados, cherry tomatoes, fresh corn, red onion, jalapeño pepper, cilantro, minced garlic, lime juice, cumin, salt, and pepper to prepare the avocado salsa.
  5. Slice the cooked chicken and top generously with avocado salsa before serving.
