  • 1 lb potato gnocchi (store-bought or homemade)
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare ingredients by slicing chicken and halving tomatoes.
  2. In a large skillet over medium heat, add olive oil. Cook seasoned chicken until golden brown (5–7 minutes). Remove and set aside.
  3. Sauté minced garlic in the same skillet until fragrant (about 30 seconds), then add cherry tomatoes for another 2 minutes.
  4. Pour in chicken broth and simmer before stirring in cream, lemon zest, and juice (remove from heat briefly to avoid curdling).
  5. Stir in gnocchi; cook until tender (about 3–4 minutes). Add spinach just before finishing cooking to wilt.
  6. Return cooked chicken to the skillet, mix well, season, and garnish with fresh herbs before serving.
