  • 2 large eggs

  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, mix together 1 1/2 cups flour, 1/2 cup sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup of this mixture for topping.
  2. Press the remaining mixture into the bottom of an 8×8-inch baking pan lined with parchment paper. Bake for 12-15 minutes until lightly golden.
  3. In another bowl, whisk together eggs, 1 cup sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
  4. Pour the lemon mixture over the baked crust and sprinkle with reserved crumb topping.
  5. Bake for an additional 20-25 minutes until set and lightly golden on top.
  6. Allow the bars to cool completely at room temperature before chilling in the refrigerator for at least one hour. Slice into squares and serve with powdered sugar if desired.
