  • 4 boneless skinless chicken breasts
  • Salt and pepper (for seasoning)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook the chicken for 3-4 minutes per side until golden brown and fully cooked. Remove from the pan.
  3. In the same pan, sauté minced garlic for one minute, then add chicken broth, lemon juice, and zest. Bring to a boil, reduce heat, stir in heavy cream and simmer for five minutes until slightly thickened.
  4. Stir in Parmesan cheese until melted, then add spinach and cook until wilted. Return chicken to the pan, spoon sauce over it, sprinkle with additional cheese, cover, and cook for another two minutes.
  5. Garnish with sliced lemon and extra Parmesan before serving.
