Instructions

  1. Preheat your oven to 325°F (160°C). Prepare an 8-inch springform pan by lining it with parchment paper at the bottom.
  2. In a clean bowl, whip egg whites on medium speed until frothy. Gradually add 1/3 cup sugar and continue whisking until stiff peaks form.
  3. In another bowl, whisk together egg yolks, yogurt, vanilla extract (or lemon zest), cornstarch, and salt until smooth.
  4. Gently fold in the whipped egg whites in three increments into the yogurt batter without deflating the mixture.
  5. Pour the batter into the prepared pan and bake in a water bath for 50–60 minutes or until golden brown and cooked through. Let it cool in the oven for 15 minutes before removing.
