Ingredients

  • Boneless, skinless chicken breasts
  • Medium zucchini
  • Olive oil
  • Fresh garlic
  • Lemon juice and zest
  • Oregano
  • Basil
  • Thyme
  • Parmesan or feta cheese (optional)
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season chicken breasts with salt, pepper, and half of the herbs.
  3. Slice zucchini into rounds or half-moons. Toss with olive oil, minced garlic, lemon juice, zest, remaining herbs, salt, and pepper in a mixing bowl.
  4. Layer seasoned chicken in the center of the baking dish and arrange zucchini around it.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). If using cheese, sprinkle over chicken during the last 5 minutes.
  6. Let rest for 5-10 minutes before serving.
