  • 1 baguette (sliced into 1/2 inch thick rounds)
  • 1 tbsp olive oil (used for brushing)
  • 250 g Baby Bella Mushrooms (thinly sliced)
  • 2 garlic cloves (minced)
  • 1/4 cup apple vinegar
  • 1 tbsp salt and pepper (to taste)
  • 1 dash crushed red pepper flakes (OPTIONAL to add a little heat)
  • 1 package Brie Cheese (sliced)
  • 1 bunch fresh parsley (finely chopped for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the baguette into 1/2 inch rounds and brush both sides with olive oil. Toast on a baking sheet for 3-5 minutes until golden brown and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add sliced mushrooms. Cook until golden brown (about 5-7 minutes), then stir in apple vinegar and season with salt, pepper, and optional red pepper flakes.
  3. Assemble each toasted baguette slice with a piece of brie followed by the mushroom mixture. Return to the oven for 3-5 minutes until the cheese is melty.
  4. Garnish with fresh parsley and serve warm.
