  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose (or light corn syrup)
  • Few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare your workspace by greasing baking paper on a tray. Insert bamboo skewers into the apples.
  2. In a saucepan over medium heat, combine sugar, water, corn syrup, and black food coloring. Stir gently until dissolved.
  3. Stop stirring once dissolved, wash down the pot’s sides with a wet brush, and cook until it reaches hard crack stage (150ºC/310ºF).
  4. Carefully dip each apple in the hot caramel, swirling to coat evenly.
  5. Place dipped apples on the prepared sheet to cool and allow them to harden before serving.
