  • 3/4 cup water
  • 1/2 cup liquid glucose (light corn syrup)
  • Few drops black gel food coloring
  • 6 Granny Smith apples (fresh, unwaxed)

Instructions

  1. Prepare a baking sheet by lining it with greased baking paper.
  2. Skewer each apple with a bamboo stick and set aside.
  3. In a saucepan over medium heat, mix sugar, water, corn syrup, and black food coloring. Stir until dissolved.
  4. Once dissolved, stop stirring and wash down the sides of the pot. Cook until reaching hard crack stage (150ºC/310ºF).
  5. Dip each apple into the caramel mixture, ensuring an even coat.
  6. Place coated apples on the prepared baking sheet and allow to cool completely.
