  • 1 cup milk
  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, and spices.
  3. In an electric mixer bowl, beat room temperature butter and pumpkin puree until combined. Add sugar and mix well; then incorporate eggs one at a time along with vanilla.
  4. Gradually add flour mixture alternately with milk until just combined.
  5. For the crumb topping, mix cold cubed butter with brown sugar, flour, and spices until small crumbs form.
  6. Pour half of the batter into the prepared dish followed by half the crumb mixture; repeat layers and bake for 45-55 minutes until toothpick inserted comes out clean.
