  • ½ cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 4 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • ¾ cup milk (room temperature)
  • 1½ cups strawberry puree (from above)
  • 1 cup unsalted butter (room temperature)
  • 45 cups powdered sugar (sifted)
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup strawberry puree (from above)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. Puree strawberries in a blender until smooth; reserve for batter and frosting.
  3. Mix dry ingredients: flour, baking powder, baking soda, salt.
  4. Cream together butter and sugar until fluffy, then add eggs one at a time followed by sour cream and vanilla.
  5. Alternate mixing in dry ingredients with milk until just combined; fold in strawberry purée gently.
  6. Divide batter into pans and bake for about 30 minutes or until a toothpick comes out clean.
  7. Prepare the buttercream by beating room temperature butter, then gradually adding powdered sugar and strawberry purée until smooth.
  8. Once cakes are cooled, frost layers with buttercream; garnish as desired.
