  • 0.25 cup brown sugar
  • 1 large egg

  • 1 cup lemon juice (freshly squeezed)
  • 0.5 cup granulated sugar
  • 0.25 cup all-purpose flour
  • 0.25 tsp salt
  • 3 large eggs
  • 2 tbsp unsalted butter (melted)
  • 0.5 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter (cold and cut into small pieces)
  • 0.25 cup granulated sugar (for extra sweetness, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together softened butter and both types of sugar until light and fluffy. Beat in one egg along with vanilla extract until well combined.
  3. Gradually add in flour and baking powder, mixing just until combined. Press half of this cookie dough into the bottom of your prepared pan.
  4. In another bowl, whisk together freshly squeezed lemon juice, granulated sugar, all-purpose flour, salt, eggs, and melted butter until smooth. Pour this mixture over the cookie crust already in your pan.
  5. In a separate bowl, combine remaining flour, granulated sugar, and cold butter pieces. Mix until crumbly; then sprinkle this mixture over the lemonade filling in your pan.
  6. Place your pan in the preheated oven and bake for 40–45 minutes or until golden brown on top and filling is set.
  7. Allow your Sugar Cookie Lemonade Crumble to cool completely before cutting into squares for serving.
