  • 100 g dark or semi-sweet chocolate
  • 50 g natural cocoa powder
  • 230 g unsalted butter
  • 4 large eggs
  • 150 g granulated sugar
  • 100 g brown sugar
  • 100 g all-purpose flour
  • 250 g mascarpone cheese
  • 200 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons espresso powder
  • 150 g hot water
  • 12 ladyfingers
  • 1 tablespoon cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Melt chopped chocolate and cubed butter in a heatproof bowl over simmering water; let cool slightly.
  3. In another bowl, whisk eggs with granulated and brown sugars until combined. Gradually add the melted chocolate mixture while whisking.
  4. Sift together flour and cocoa powder, then fold into the wet mixture gently.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out mostly clean. Cool completely.
  6. Soak ladyfingers briefly in hot water mixed with espresso powder and layer them over the cooled brownies.
  7. Whip together mascarpone cheese, cold whipping cream, powdered sugar, and vanilla until soft peaks form; spread over ladyfingers.
  8. Dust with cocoa powder before serving.
